Ingredients
For the crust (make more of this if you want to decorate the pie as shown in the photo):
- 250 g flour
- 125 g cold butter (cubed)
- 50 g sugar
- 1 egg
- 1-2 tablespoons cold water
For the filling:
- 400 g pumpkin puree (from a packet or can or homemade)
- 200 ml condensed milk
- 2 eggs
- 100 g brown caster sugar
- 2 generous teaspoons pumpkin spice (or 1 tsp cinnamon, ½ tsp ground ginger, ¼ tsp nutmeg and ¼ tsp cloves)
- pinch of salt
Preparation
1 - Make the crust : Mix the flour, sugar and a pinch of salt in a bowl. Add the cold butter and rub it in with your fingers until the mixture resembles breadcrumbs. Add the egg and water and knead briefly until a cohesive dough comes together. Wrap in cling film and let it rest in the fridge for 30 minutes.
2 - Prepare the filling : In a large bowl, whisk together the pumpkin puree, condensed milk, eggs, sugar and all the spices until smooth.
3 - Line the pie dish : Roll out the dough on a floured work surface and line a greased pie dish (approximately 23 cm in diameter) with it. Trim the edges neatly.
4 - Filling and baking : Pour the pumpkin filling into the pie dish. Bake the pie in a preheated oven at 180°C (160°C fan) for 50-60 minutes, or until the filling is set and a skewer comes out clean.
5 - Let cool : Let the Pumpkin Pie cool completely before cutting into it. Serve with a dollop of whipped cream for the ultimate experience!
Tips for the best pumpkin pie
- Make your own pumpkin puree? Cut a butternut squash into pieces, remove the seeds and bake it in the oven for 40 minutes at 200°C. Spoon out the soft pumpkin and puree it until smooth.
