Lemon curd mousse with Biscoff

Recipe for 2 servings of lemon curd

Supplies:

  • Hand mixer
  • Blender
  • Piping bag (optional)

Ingredients

  • 280 g ricotta
  • 120 ml whipped cream
  • 20 g sugar
  • 2 tbsp lemon curd
  • 30 g butter
  • 8 Biscoff cookies

Preparation

  1. The bottom
    Crush the Biscoff cookies in a blender. Melt the butter over low heat and stir it into the crumbs. Divide among serving glasses and press down lightly with a spoon.

  2. The mousse
    Place the ricotta in a mixing bowl and mix with the lemon curd until smooth.

  3. The whipped cream
    In a separate bowl, beat the cream with the sugar until soft peaks form.

  4. To combine
    Gently fold the whipped cream into the ricotta mixture, ensuring the mousse remains airy.

  5. Serve
    Spoon or pipe the mousse onto the Biscoff base. Refrigerate until ready to use, or serve immediately.
