Recipe for 2 servings of lemon curd
 Total time: 25 minutes

Supplies:
- Hand mixer
 - Blender
 - Piping bag (optional)
 
Ingredients
-  280 g ricotta
 -  120 ml whipped cream
 -  20 g sugar
 -  2 tbsp lemon curd
 -  30 g butter
 - 8 Biscoff cookies
 
Preparation

The bottom
Crush the Biscoff cookies in a blender. Melt the butter over low heat and stir it into the crumbs. Divide among serving glasses and press down lightly with a spoon. - 
The mousse
Place the ricotta in a mixing bowl and mix with the lemon curd until smooth. - 
The whipped cream
In a separate bowl, beat the cream with the sugar until soft peaks form. - 
To combine
Gently fold the whipped cream into the ricotta mixture, ensuring the mousse remains airy. - 
Serve
Spoon or pipe the mousse onto the Biscoff base. Refrigerate until ready to use, or serve immediately.
