Recipe: classic cherry pie

Fancy a good old-fashioned cake for your fika moment ? This cherry pie is easy to make, crispy on the outside and deliciously moist on the inside. Perfect with a generous dollop of chocolate. rème fraîche or a scoop of vanilla ice cream.

What do you need for approximately 8 slices of cake?

For the dough:
• 300 g flour
• 150 g cold butter (cubed)
• 100 g granulated sugar*
• 1 egg
• Pinch of salt
• 1-2 tbsp cold water

* granulated sugar makes the crust crispy; if you prefer a more crumbly crust, try using brown sugar.

For the filling:
• 1 jar of cherries in juice (approx. 700 g, drained, you will have 350-400 grams of cherries left)
• 2 tbsp cornstarch
• 2 tbsp granulated sugar or sweetener (more to taste)
• Juice of ½ lemon
• 1 tsp vanilla extract

For the finishing:
• 1 egg (beaten, for brushing)
• Whipped cream, vanilla ice cream or crème fraîche to serve

Required:
Springform pan with a diameter of 22 - 24 cm

Preparation

1. Make the dough
Combine the flour, sugar, and salt in a bowl. Add the butter and rub it in with your fingers until crumbly. Add the egg and a little cold water and quickly knead into a ball. Wrap in cling film and let it rest in the refrigerator for 30 minutes.

2. Prepare the filling
Drain the cherries well. Place them in a saucepan with the lemon juice, sugar, vanilla, and cornstarch. Heat over medium heat, stirring until the mixture is thick and glossy. Let it cool.

3. Preheat the oven
Preheat the oven to 180 °C (top and bottom heat).

4. Assemble the cake
• Divide the dough into two (1 part slightly larger for the base).
• Roll out the largest piece and line a greased cake tin.
• Scoop in the filling.
• Roll out the second piece of dough into a lid.
• Place this on top of the filling and press the edges firmly with a fork.
• Using a sharp knife, cut 3-4 slits in the center of the lid to allow steam to escape.

5. Let's bake
Brush the top with beaten egg for a nice shine. Bake the tart in the center of the oven for 40-45 minutes, or until golden brown. Keep an eye on it!

Serve and enjoy

This cherry tart is best enjoyed lukewarm. Serve with a generous spoonful of lightly sweetened whipped cream, a scoop of crème fraîche, or a scoop of vanilla ice cream. A serious warning: one slice is rarely enough...
