Last week it finally happened: my very first attempt at reviving and keeping a sourdough starter alive. Her name? Bep from Keukenboeren . A simmering pot on the counter, which we've practically started to consider a pet. Because yes, a starter like that is alive!
Anyone who's ever baked with sourdough bread knows: Bep is generous. She gives a lot. A whole lot of leftover dough. And throwing it away? I can't do that. So that bowl in the fridge kept filling up. That's how the idea came about to make a huge stack of pancakes this weekend. The result is incredibly delicious (and we have breakfast all week).

Sourdough leftovers make super tasty pancakes
These healthy pancakes are wonderfully fluffy, have a slightly different flavor (a slightly tart, but delicious), and… you don't need any extra flour. Just your leftover starter, some eggs, soy milk, salt, and maybe vanilla extract, and voila—bake away. I've eyeballed the batter a bit, but with the recipe below, it should definitely turn out well.
Ingredients (for ± 8 - 10 pieces):
• 300 g sourdough starter (leftovers from Bep)
• 2 eggs
• 100 - 150 ml (unsweetened soy) milk (depending on the desired thickness)
• 1 tsp vanilla extract
• Pinch of salt
This is how you make them:

Beat the eggs in a large bowl.

Add the sourdough starter, soy milk, vanilla, and salt. Mix until smooth.
• Want thinner pancakes? Add a little extra soy milk.
Prefer thick American-style pancakes? Then use a little less milk. -
Heat a frying pan with a little oil or butter.

Cook the pancakes for about 1–2 minutes per side, until golden brown.
Serve them warm, with A knob of butter, some maple syrup, fresh fruit, or whatever you like. And trust me: you'll be happily collecting your leftover starter from now on!

From leftovers to a feel-good breakfast
What started as an experiment to reduce waste ended in a Sunday breakfast that everyone enjoyed. And the best part? Bep's first loaf goes in the oven tomorrow morning. I can't wait!
