Fries are always a good idea. But every now and then you want something a little different than your standard fries with mayo. These Japanese Loaded Fries are just that: comfort food with a surprising Tokyo twist. Think: crispy fries, crispy panko shrimp, a generous lick of wasabi mayo and a pinch of nori for that umami feeling. Every bite is a little flavor explosion, and the best part? You can make this street food-worthy dish at home.

Inspired by the Japanese Shaka Shaka Fries (yes, they're as fun as they sound), Shannah from Just Gimme Fries takes the classic snack to the next level. Whether you want to impress friends or just treat yourself to something special, this recipe will be your new go-to for an evening of culinary delights with a playful nod to Tokyo.

Shaka Shaka… say what?

In Japan, they have a special fries concept: Shaka Shaka Fries (シャカシャカポテト) . You get a bag of fries with a special spice mix. Throw everything together in a paper bag, shake well (shaka shaka!), and voilà: each fry is perfectly seasoned. This recipe is a creative spin-off of that idea, with a big dose of fusion vibes.

Japanese Loaded Fries with panko shrimp & wasabi mayo Ingredients

Servings: 2 | preparation time: ± 30 minutes
You will need: air fryer (deep fryer or oven), frying pan, large mixing bowl

  • 400 g fresh fries (suitable for airfryer, deep fryer or oven - your choice
  • 150 g pre-cooked shrimps
  • 4 tbsp dried seaweed flakes
  • 1 tbsp sesame seeds
  • 1 tbsp soy sauce
  • 1 egg
  • 6 tbsp panko breadcrumbs
  • 3 tbsp flour
  • 2 spring onions
  • sunflower oil
  • coarse sea salt

For the wasabi mayonnaise:

  • 3 tbsp Kewpie mayonnaise (or regular mayo)
  • Wasabi paste to taste
  • 1 tsp sesame oil (optional)

Japanese Loaded Fries with panko shrimp & wasabi mayo Preparation

Step 1: Japanese fries

Bake the fries in the airfryer as indicated on the package (about 12 minutes). Take them out halfway, throw them in a bowl and toss with the seaweed flakes, sesame seeds and a pinch of salt. Then back in the airfryer until golden brown and crispy.

Step 2: Shrimp with a crunch

Let the shrimp marinate in soy sauce. Prepare three plates: one with flour, one with beaten egg and one with panko. First put each shrimp through the egg, then flour, egg again and finally through the panko. Heat a generous dash of sunflower oil in a frying pan and fry the shrimp until golden brown and crispy. Drain on kitchen paper.

Step 3: Making wasabi mayo

Mix the mayo with the wasabi (start with a little, taste, and add as needed!) and, if desired, a little sesame oil.

Step 4: The construction

Place the fries on a plate, sprinkle some extra seaweed or sesame seeds over them if desired. Divide the crispy shrimps over them, followed by rings of spring onion and a few generous stripes of wasabi mayo.

These loaded fries are a perfect match with an ice cold beer, sake or a fresh cocktail. I myself once tasted a similar version of these Laoded fries during a nighttime pub crawl in the Kichijōji district in Tokyo, much tastier than the ones at McDonald's, and unforgettable. One thing is for sure: you will want to make this fusion snack often.
