Supplies :
- (Electric) grater
- Deep bowl
- Deep fryer or deep fryer
Ingredients
- 450 g sweet potatoes, peeled
- 1 red onion
- 2 medium eggs
- 120 g flour
- 45 g Parmesan cheese, freshly grated
- Black pepper & salt
- Sunflower oil, for frying
- Truffle mayonnaise, to serve
How to make the potato bites

Prepare
Peel the sweet potatoes, pat them dry, and grate them finely. Place the grated potatoes in a large bowl. -
Add onion and eggs
Grate or finely chop the red onion and add it. Crack the eggs into the bowl and mix well. -
To season
Season the mixture generously with salt and black pepper. Add half the Parmesan cheese and the flour, and stir again. -
Making shapes
Scoop a generous spoonful of the mixture at a time and shape it into small oval loaves. Place them on a plate ready for baking. -
Baking
Heat a layer of oil in a frying pan or set the deep fryer to 180°C (350°F). Carefully slide the bites into the oil (two spoons are easiest) and fry until golden brown and crispy. -
Serve
Drain the bites on paper towels. Sprinkle with the remaining Parmesan cheese and serve with a generous dollop of truffle mayonnaise or drizzle it over the top.
