After the heat of the past few weeks, a nice breeze is suddenly blowing. And then you automatically think of autumn. That is also a nice idea; nice inside, make your house cozy and prepare for the holidays, right?! That is why here is a delicious vegan recipe for the coming autumn. Enjoy!
Vegan pumpkin pecan pie with chocolate
When you think of pumpkin, do you think of savory? Fine, but you can also use it in a delicious sweet pie this fall and it will be DELICIOUS!
Ingredients
Number of points: 8-10
- 1 pumpkin (about 800 grams)
- 6 slices of vegan puff pastry
- 11 (medjool) dates, pitted
- 100 ml coconut milk
- 1 tbsp speculaas spices or pumpkin spice spices
- 1 tbsp cornstarch
- pinch of salt
- 2 handfuls of pecan nuts
- 2 tbsp sugar of choice (maple syrup, agave syrup or regular sugar)
- pinch of salt
- optional: chocolate flakes
Preparation method
- Preheat the oven to 180 degrees.
- In the meantime, line a baking tin (approximately 20 cm in diameter) with baking paper and place the puff pastry sheets in the baking tin, so that they defrost a little.
- Cut (and peel if necessary) the pumpkin into small cubes. Boil the pumpkin cubes for about 15 minutes until the cubes are completely soft. Drain the water and let the pumpkin cool down a bit.
- Pit the dates. If the dates are very hard, you can soak them in hot water for a while. Put the pumpkin cubes with the dates, coconut milk, speculaas spices and a pinch of salt in the food processor or powerful blender until a smooth mixture is created.
- Then mix the cornstarch through the pumpkin mixture. Taste and add more speculaas spices if necessary.
- Divide the puff pastry evenly over the baking tin, both the bottom and the sides. Use your hands to push the dough together.
- Then pour the pumpkin mixture onto the puff pastry base and place the pie in the preheated oven for 25 minutes.
- In the meantime, make the candied pecans by frying the pecans in the pan with the syrup and salt. Stir well and make sure the pecans do not burn. Let the pecans cool.
- The pie is done when the puff pastry is nicely brown. When the pie comes out of the oven, sprinkle the top with the caramelized pecans and possibly the chocolate flakes.
Optional : serve the piece of cake with a scoop of vegan ice cream or whipped cream. Enjoy!
